Coconut Marshmallow Tart

Ingredients:



1 Pastry Shell

1 1/2 cup sugar

2 egg yolks

1 Tablespoon Butter

2 Tablespoons plain flour

2 cups boiling milk

1/2 cup coconut

1 Tablespoon gelatine

1 1/4 cup boiling water

Vanilla essence

Extra coconut

Method:

Filling:

Beat 1/2 cup sugar, and the yolk of 2 eggs. Then beat 1 tablespoon butter and 2 tablespoons plain flour.

Mix both lots together.

Add 2 cups boiling milk.

Place on stove and stir until it thickens. Remove and when cool add 1/2 cup coconut and spread on tart shell.

Marshmallow:

Dissolve 1 tablespoon gelatine dissolved in 1/4 cup boiling water. Dissolve 1 cup sugar in 1/2 cup boiling water. Let both lots cool and then combine and beat until thick.

Add a few drops of vanilla and place on filling.

Sprinkle with coconut.
