Kellogs Cornflake Crumbs are commercially available at the supermarket - but if your supermarket doesn't sell them, you can simply place some normal cornflakes in a plastic bag, and crush them with a rolling pin until they are a very fine consistency. Alternatively, if you have a food processor - this would be ideal.

Cornflake Crumbs (Kellogs)
2 beaten eggs
Extra Virgin Olive Oil
Butter
Method:
Take the Chicken Breast, and slice it thinly - you should be able to get about 3 slices from one chicken breast.
Dip each Chicken Breast in the beaten egg, thoroughly coating it on both sides.
Immediately coat the Chicken Breast in cornflake crumbs, using your hands to press the crumbs firmly into the chicken breast.
Heat oil and butter in a frying pan or skillet. When the oil is quite hot, quickly place the crumbed chicken breast into the oil. Fry each side for about 3 minutes, or until the chicken breast is cooked thoroughly.
Serve with steamed vegetables or salad. My
