Irish Stew
Ingredients:
1 lb middle neck of mutton
2 lb potatoes
3 onions
salt and pepper
water
chopped parsley
(optional - carrots)
Method:
Wipe the meat, trim if necessary and cut it into a number of neat joints of even size.
Slice the potatoes and onions and put alternate layers of vegetables and meat into a casserole. Add carrots also, if chosen.
Season well, and finish with a layer of potato. Add enough water to half-cvoer and put lid on.
Simmer gently for 1 1/2 - 2 hours, until the meat is tender. Dish up as shown in the bottom picture.
When it is cooked, put the meat in the middle of a hot dish, and surround it with potatoes, sprinkled with chopped parsley.
An alternative method is to begin cooking the onions and meat together, adding the potatoes halfway through the cooking time.
