Marshmallow


Ingredients:
This recipe for Marshmallow is so simple with only 4 ingredients. When my children were small, I would add colouring to the recipe and pour it into cones and sprinkle with hundreds and thousands - though the receipe can also be used to make in a baking tray and cut into squares. When set, the Marshmallow can be rolled in toasted coconut and placed into an airtight container.
2 cups sugar
1 large Tablespoon Gelatine
1/2 cup boiling water
1/2 cup warm water
Method:
Place sugar in a large bowl. Add 1/2 cup boiling water. Beat well to dissolve sugar.
Dissolve a large tablespoon of Gelatine in 1/2 cup warm water and add to sugar mixture.
Beat at high speed for 15 minutes until thick and creamy.
Add any flavouring or colouring.
Spoon into ice-cream cones and sprinkle with hundreds and thousands or coconut.
