Orange Tart
Ingredients:
First Layer:
1 pastry shell
1 cup water
1/2 cup sugar
juice of 1 lemon or orange
2 dessertspoons arrowroot
Second Layer:
1 cup milk
1 large tablespoon cornflour
2 Dessertspoons butter
3 Dessertspoons icing sugar
dash of vanilla
Method:
First Layer:
Put all ingredients except arrowroot into saucepan and when boiling thicken with 2 dessertspoons of arrowroot. Let cook, then pour into pastry.
Sprinkle with coconut.
Second Layer:
Bring milk to boil and thicken with 1 large tablespoon cornflour. Take off fire and beat in 2 dessertspoons of butter and 3 dessertspoons icing sugar and vanilla. Spread on top of first layer and sprinkle with coconut.
