Savoury Cheese Ring
Ingredients:
This recipe for a Savoury Cheese Ring is one that I was given roughly 30 years ago - it smells divine as it is baking, and will pleasantly surprise your lunch guests. It is most suitable for those times when you want a heated lunch, or just a light dinner. Served with a tossed green salad, this recipe will delight all who try it...
Scone Mixture:
2 cups self-raising flour
1 teaspoon salt
3 tablespoons margerine
1/2 cup grated cheese
pinch cayenne pepper
1 egg
1 cup milk
Filling:
250g luncheon beef (leftover corned silverside is perfect)
2-3 guerkins
2 teaspoons melted butter
2 teaspoons chopped parsley
1 small onion
1/4 cup grated cheese
1 tablespoon tomato sauce
Method:
Prepare Filling:
Dice beef and guerkins finely. Grate the onion and chop parsley.
Combine all ingredients and mix well.
Prepare Scone Mixutre:
Sift flour, salt and pepper into a bowl.
Rub margerine through with the finger tips.
Add grated cheese.
Add beaten egg and milk to make a moist scone dough.
Turn onto a floured board and knead lightly. Roll into a rectangle about 30cm x 20cm.
Spread with the prepared filling. Form into a roll, and then bend the sides inwards to form a ring.
Cut 2/3rds of the way through the ring with scissors or a sharp knife.
Brush with egg and milk.
Bake in a moderate oven for 30-35 minutes.
