This is so easy to make and it really impresses. I always volunteer to make this as it the taste factor is GREAT with minimum effort!
You need:
1 300ml carton of whipping cream
1 tin of condensed milk
1/2 cup of lemon juice - fresh squeezed is best
1 packet of chocolate bottomed scotch fingers (NB - with the size of the packets of biscuits shrinking these days, you can buy 2 packets and hide the rest for later!)
Use baking paper to cover the bottom of your tin (I usually use a lamington tin. Then carefully lay the biscuits chocolate side down over the bottom of the tin so it is all covered.
Whip the cream until it is fairly stiff. Drizzle the condensed milk in while still beating. Then whip in the lemon juice. The mixture will start to stiffen now.
Spoon the mixture over the biscuits and then put it into the fridge for half an hour.
Cut into squares once it is nice and chilled.
